Does this mean that Acer are definately NOT doing an upgrade to 2.1 for the original Liquid. Was looking at the Liquid as my next phone, but now not so sure and should I wait until Liquid e is available?

Android 2.1 would demonstrate the real capabilities of the hardware, specially the fast processor. A great phone (considering the specs) and expecting better audio quality in this model.
