u cant delete ur saved email id, but u can add the one which u wish to.
go to settings -> accounts -> add account -> google -> and then add to existing or add new (hardly matters)
then u will start receiving mails and other details for both ur mail id's

I have by mistaken added a wrong i.d. in gmail but there is no option to sign out nd delete
I hv searched all google setting options nd gmail nd google plus
