I have just switched from my note N7000 to a Galaxy S5. I was getting slightly put off by the look of the 2011 TouchWiz but I really like the new one. Themes are a thing of the past since there are many custom launchers available in the Play store.

1. If u open an app, then you must wait too long until it finally shown on screen. That is called LAG. But All recent flagship high end devices don't have this problem.
2. If u touch a letter on your keyboard, and it doesnt quickly shown (when u type). It is a lag too.
3. When the animations look stuttered/choppy, it's called lag too. For example when u open Contact app on samsung devices, it will animate by zooming on your screen. On all samsung devices the animations look choppy/stuttered/un-smooth.

I already turned off s voice, and also disable other S* apps. Why is still laggy if it's not because of touchwiz? I tried to do factory reset, and after a week it becomes laggy again.
If a device doesn't perform near as smooth as nexus, i call it LAG.
Open your eyes bro.. TOUCHWIZ = LAG.

Some devices do better but eventually you'll need to reboot your computer-like phone or tablet.
I'm currently using both Symbian and Android devices and both have their pros and cons. But one constant is always there. Eventually I have to reboot my devices (usually after a couple of days or weeks).
Again we shouldn't exaggerate this. In your own specific case we need to see your usage pattern or workflow to find out why your particular device "slows down". And don't forget, the grass looks always greener at the other side.

Crap like that S-Voice (that slows the usage o/t home-button), that BLURB or Flipboard crap, that Knox crap, that stupid kids-mode (which is unnecessary because you can download something similar from Play), etc...
Sure some apps need better optimization e.g. Samsungs Gallery app. But IMHO Samsung's TW is not bad. It has a rich feature-set build-in and looks quite good. Sure, it could be more efficient with its onscreen space. For example Apex/Nova is in that respect a lot better. But at least you can remove unneeded home-screens unlike some o/t other UI's that get build into certain Android devices.
IMHO we shouldn't exaggerate the importance of TouchWiz. In my own opinion TW is the LEAST of my concerns regarding my phone. It's the apps and feature-set that counts.
But that's just my 2 cent.
