Unfortunately, the Chinese version will not have Android Market, will not have any Google services. It will have access to a bunch of cartoony, crappy Chinese apps, unfortunately.
Besides a fancy screen, this phone will be mostly useless for anybody who actually wants to buy a high-end phone.

What I want:
#1 - Unlocked bootloader
#2 - More RAM (1GB preffered)
...anything else?
Support for the Lap-dock would be nice, get rid of the PenTile layout (even if it means cutting resolution back to 854x480).
Otherwise I'm sticking with Samsung!

It should not be having a 512MB RAM as Atrix comes with 1GB RAM. Upgraded version should have more RAM (2GB).
Same exist with the Processor. Its should have 1.5 or 2 GHz Dual Core as Samsung Galaxy 2 is already out in market with 1.2 GHz Dual Core.
iPhone 5 is also expected to launch in September which will be a delight to watch in terms of designing as well as hardware.
I felt the Battery should have also passed a mark of 2000 mAh since screen is 4 inch with a slider keyboard.
Having a 5 Rows full keyboard with dedicated Numeric keys will be a challenge for other rivals.

With the latest rumour being that this phone won't come to the UK, does anybody know if a Chinese, or other non-UK, variant was purchased, whether it would be possible to run it in English in the UK?

Cellphone technology is never constant. Nokia had the fastest upgrade trend years ago wherein they would add a few features and release a new version of a phone in just a month or 2.
