They take out all the garbage like IP68, superamoled, glass finnish, curved screen, iris scanner and many else.
Everything which can cost a lot of money but half of the planet will never uses.
And make a perfect phone for 95% of the people.
Rest 5% will always buy the phone with IP68 super amoled instead of LCD and a glass finnish for better look.

Sure I normally use 360p with Globe, Philippines's most popular but still crappy internet 4G service, I want to use 1080p when I get home with muh 35mbps Fiber. If I have a Pocophone F1 than a Nokia 8 (2017), I would be extremely nitpicky for not having 1080p on my YouTube.

The YouTube thing you mentioned is a great example, I can watch videos and do some light social media browsing on a Samsung Galaxy Core Prime from 2014 (budget phone at the time, snapdragon 410 based with 1GB of RAM) but browsing webpages, gaming and using snapchat is pretty slow.

when people always look for cheap alternatives then you better buy some Chinese phone for 200 dollars but if you require performance and durability then better go spend more dollars for Huawei, Samsung, Apple or Nokia for at least they jam packed some of the best from their laboratories into their phones. Its not just business but its almost a culture for them to do their best in this market most specially the Huawei and xiaomi who are gaining momentum in this race even if they are also like other companies who copy and paste
