I don't think OEMs are trying to cater to the customers demands, they just develop some cool new features, pull some other already existing ones, then remove some others that would either make the phone more expensive or would improve their business in the long term (no memory slot, no removable battery etc) and then wrap it all together in a cool looking package.
I don't think the notch is a terrible idea if it services a real purpose. The one on the Mate 30 is looking to be a pretty subtle one that will look good unlike the one on the Pixel3 or IPhone XS

First of all, if someone says X phone is the best phone, then that is their personal opinion. Opinions can vary from person to person.
Secondly, just because you can't deal with a phone with a notch doesn't mean others must feel the same way. There are a lot of things to like about Huawei's flagships, so people could just be interested in those important factors while not caring about a notch or a curved screen. There is no perfect phone out there, every phone can be subjected to criticism for it's flaws, including whatever phone you like.

If a company releases multiple flagships per year, that doesn't mean they're targeting the same customers. It's mostly different customers buying the newer product.
As per surveys, the majority of people switch their phones every 2 years. So the same customer would only upgrade their device after 2 years (for e.g. Mate 10 Pro > Mate 30 Pro). While a new customer might buy P40 Pro next year instead.

This is the trend going forward and there is little we can do to stop it. Maybe one or two OEMs will keep these features but most will not, just deal with it and quit whining everyone.

They ask Marketing what to do to release their latest premium device at 2x the profit and Marketing tells them how to hype the product and undermine its cut corners so people buy it.

In forums like this you'll always find people moaning about notches, headphones jacks, curved screens, SD slots & such. In real life, most people desire for whatever the latest trend is. Phones like the iPhones, Huaweis, OnePlus devices & so on are among the the highest-selling devices, even though they have notches, curves, No SD slots & no headphone jacks.
Heck, even the upcoming Samsungs will fall into the same category.
Manufacturers cater to actual customers rather than internet keyboard warriors. Just putting the facts out there.
