We don't need a market with no curved screens, as people who likes it, like you, deserve to have what they are looking for, but we also certainly don't need a market where ALL flagships have curved screens.
In fact, we should have either much less curved edge in the flagship, or variants of those flagship & high-end phones having both flat and curved display.
And more in the middle range.
Exactly like PC's monitors are :
*Some are curved, the rest are not.
*Some have high refresh rate (over 75Hz) while the rest still have between 60Hz and 75Hz.
*Some are 4k, some are even 8k, some are 1024p and the rest are 1080p.
*Some are 16", some are 55", most are 24" and 27".
*Some have G-Sync, most don't, a lot have Freesync, but only those who needs it (gaming oriented).
*Some have super low latency, not all, it is also based on needs.
*Some are tactile, most aren't.
There are niches and other non-mainstream options available, but obviously the standard/best is what you'll find the most, still, it is hard to not find a monitor you want except if you want extreme niche things, and the same is true for all markets except smartphones.
There are some high-end monitors with flat display, like the 27" EIZO ColorEdge CG2730 for example who is a high end in terms of color performance and has an integrated color calibration sensor, but it also has no Freesync nor G-sync, nor a

First, people buy stuff because they are trending rather than because they like it.
Second, the Android market is the only market on the planet with no diversity whatsoever, forcing to buy the bad designs from one side and clearly proving how OEM doesn't care on the other side, since there are no other options available, they can do whatever they want, and since a smartphone is a must-have nowadays, well, they simply don't care as everybody will end up buying one anyway.

No one is gonna tell me Samsung UI is better. I completely understand why people choose iPhone instead of android. Samsungs software and and ui and "extra" services are the most laggy and unpolished software I had to deal with for years. All stupid duplicates apps, stores etc. When you install new android on 1+ it optimizes 75 apps, Samsung 150. Just go and check any other device ie oppo, Huawei, oneplus. Samsung is a piece of... and they have to pay me fortune for using this crap.

oneUI, MIUI, coloOS, iOS, etc etc...all of them will lag, thats called "hardware" and hardware until certain time starts to degrade, even more on phones.

No bloatware at all. During first setup I kept only calculator checked. No Samsung Internet browser no Samsung Music... Many things are gone. It is almost stock android. Much better than iOS MIUI and many others.
