I think only some apps like Wallet, Safari, Find My phone or Face ID will remain. The rest you can uninstall (including Apple Music, Apple Tv, Health app, all Tools apps, even Mail app).
In Android not so much. The most bloated UI for me was the One Ui, followed closely by MiUi.
The best Android skins (regarding the amount of bloatware), are Oxygen OS (before they make it sh*t Color OS), Realme Ui and Stock Android.
If you have a more powerful Android phone, the bloatware in One Ui or MiUi will not matter, because the phone can handle everything. But for more budget phones is not good.

Xiaomi intentionally damages its phones through software upgrades in about 3 years. It has happened with two of my xiaomi phones (3s prime and note 7).
First the screen flickers for few days. Once you do factory reset, it goes completely dead (doesn't even charge after that).
I still have 2 xiaomi phones (note 8 & note 11). If the same issue happens with either of them, then I won't even have their phone again even for free.

People like complaints about the price by comparing to Apple and Samsung, why so bothering to justify it? Just go and buy your preferred phone from Apple and Samsung, or even other brands like Motorola and Nokia. Just that simple.
If Xiaomi really not worth for you to buying it, there still have plenty selection out there.
In such market competition, if xiaomi failed to provide user interest, of cause they will squeeze out of the game in no time.
Just enjoy the show and move on.

The 12 has no IP rating, no telephoto camera and dubious software support, why would anyone pay the same price as an S22 for that?

If Xiaomi is only selling to tech fans then they won't sell a lot of phones. An average consumer who only knows iPhones and Samsungs is hardly going to pay the same price for some Chinese brand.
