Regarding update speed, a delay of several months is significant, and it's understandable to be frustrated. While Samsung could potentially release updates faster, their stated priority is stability, this is also currently happening with Zenfone or Motorola flagship for Android 15 rollout. But, I agree, this year, One UI 7 release on older devices is too slow and does have negative impact on Samsung.
Concerning the customisation, One UI, especially with Good Lock modules (like the new unique Home Up DIY home screen), offers a unique level of customization unmatched by most other mainstream Android skins.
The assertion that Chinese UIs don't heavily mimic iOS is demonstrably false in many cases. Origin OS (Vivo in BBK group), for example, has drawn considerable criticism for its clear visual similarities to iOS in the home screen design, Control Center design, and even copied features like the exact same ios Dynamic Island. Look at side-by-side comparisons, the resemblance is undeniable and widely known.
Finally, regarding computational photography, MKBHD's 2024 blind smartphone camera test (a large scale, average user preference based test) showed the Samsung S23 (with a sensor shared with the S24/S25) outperforming all Chinese flagship competitors (fifth place) in overall appeal to most people, not just so called "photography experts".
The S25 do not have better sensors than Chinese flagships, but, as shown with this test, Samsung have better computational photography algorithms for most people on the S serie.

Half a year isn't a month or a two. They could deliver updates earlier before, and while there were always bugs in them, they were never horrible. Don't tell me that you actually believe that Samsung isn't intentionally holding back the updates.

Getting Android 15 quickly on a 3-year-old Chinese flagship is great, but long-term support is about updates and security patches over many years. Samsung prioritizes a more stable rollout, even if it takes a month or two longer. Most users would prefer a stable One UI 7 experience over a rushed, potentially buggy one. Plus, users continue to get regular security patches during that wait.
User experience is subjective. One UI offers the most customization options within the mainstream Android space. The concern with some Chinese UIs is their tendency to heavily mimic iOS, at which point, the user may just buy an iPhone to have a better software experience.
All Android phones depreciate, Samsung phones, particularly flagships, generally hold their value better than many Chinese brands, especially Samsung devices within Samsung's own trade-in programs with great deals. Although, in some regions, trade-in options for certain Chinese brands (like Realme, Oppo, Vivo...) might be limited, like carrier in my country don't trade these brand devices. But still, Apple undeniably retains the best resale value overall.

Those "flashy specs" are just simply better features, to me chinese flagships weren't and still aren't tempting due to their price, only reason I get them is their features, and their software.

In what way are there trade-offs in any of those?
Let's start with software support. I have Android 15 on my 3 year old chinese flagship, while people with 1 year old Sansung flagship phones don't. Their support will be longer sure, but it doesn't matter if the updates come this late, you might need to switch phones before it even gets updated it seems like, and this is the FIRST year for those phones, not the 7th, can't even imagine how late they will give updates the older the device gets.
Okay, so user experience, which is subjective, I prefer anything but One UI so to me that would be a trade-off.
As for resale value, well I'm sorry but Samsung phones don't age well, they lose most of their value when they are 1 year old, after that their price is going down as much as it can.
