I use Apps, not OS. Certain apps (especially finance/banking) sometimes need OS updates as requirement if you want to continue using them. I had to go to my bank and re-register my account on my new phone because the old phone can no longer receive android updates after 5 years.
If you only use the tablet for media consumption, the OS update doesn't really matter. You can continue using the old apps in the old androids.

The Yoga Tab seems like rebranded Xiaoxin Pad Pro GT. It costs like 250€ on aliexpress. Similar story a while ago, with the Xiaoxin Pad Pro 2022 costing about 1/3 of the price of the european P11 Pro Gen 2.

they messed up the "Yoga" name again... first they made a non-convertible laptop with that name and now a tablet without a built-in kickstand

this is better than Galaxy S11 Tab for the 45W 256gb variant!
all-metal Lenovo Yoga Tab 11" Snap8Gen3 12/256 68W at $549+ is a winner.
The Samsung S11 Tab WiFi costs you €959 ($1120) for the 256 GB option,
maybe it's flopped?

Competitively priced but the software support and updates will likely be garbage.
