There's just a place down in the Settings Menu to use eSIM, or physical SIM. (N.B.: If a new physical SIM card doesn't work, try to Erase/Delete eSIM then reboot the phone.)

Does the Pixel 2XL (on Android 11) definitely not have full* eSIM support?
Are there any ROMs that do have eSIM support?
