SOLVED!!!
Install fixdatatoggle.apk on your device (you can find link here)
Once the icon appears in quick settings,
You can uninstall the apk.
Worked for me (S6 edge G925F)

Ha penned this weekend on my lollipop Tab S 10.5 but just telling the toggles section to go back to defaults solved it: no need to reboot

I had this same problem when I updated my Galaxy Tab S to Lollipop. The Wi-fi Hotspot toggle also disappered. All you have to do is reset the Quick Toggles in the Notification Panel menu.

dan, 15 Jun 2015it happend to me last evening so 2day i have to do a factor... moreno need for factory reset, just try to Reset the current view of the Quick Settings and it will be back again.

Its a theme engine issue, if you are on the stock theme you will never face this issue and theres no need to reset the phone just revert back to stock theme and restart the phone.

Today i restart my S6, after Mobile Data option was hidden from Quick Settings. Waiting for solution... :/

Hello! I'm from Romania and I experienced too this issue. After a reset to factory defaults the issue was gone. But I think that it will appear again......probably.
Check the following post on XDA Developers. Someone from Romania found a temporary fix for this issue.
"[ISSUE][NOT FIXED] Missing Toggle In Quick Setting Panel"
Anyway Samsung is aware of this software issue and is working on a fix that will probably come with Lollipop 5.1.1.
