My first Samsung Galaxy device had a HORRIBLE OLED display, colours and gradients were awful. The screen tech has finally caught up however, and I guess it's now at a standard where Apple are happy to swap over.

Upto the St the colors of the amoled was never near what the ips in the iPhone are . Now s6 was good the s7 is a bit better. But I can't say for sure cuz I no longer have an iPhone to compare it to. But definitely if I were to miss something from apple it would be the screen and camera.
I bet apple just know that oleds are catching up to the ips in color quality that's why they're changing

The OLED that Apple is buying from Samsung is entirely Samsung developed with 0 input from Apple. It'll be the same one that Samsung is using themselves and what they sell to other companies. Apple will probably change the color calibration a bit to trick their fanboys into thinking Apple did the developing, though. But without a doubt, the panel will be entirely developed by Samsung.
You can't design a separate screen tech and make it compatible with a fab unit that's already been made. That doesn't make sense and it's not sensible financially.

This is incorrect and an Apple fanboy fantasy that's gone way out of hand. Apple isn't smart enough to develop their own tech. Their R&D budget isn't even big enough.
Samsung both designs it and manufactures it. If Samsung only manufactured, then Apple would be using other companies to manufacture the panels. Why would they be using Samsung when they could be using JDI or LG like they are for LCD? It's because JDI and LG OLED tech is vastly inferior to the point where they can't replace Samsung's screens. If they were only a little inferior like in the LCD department, Apple wouldn't be using Samsung. Apple has nothing to do with "designing" a screen. Apple is just buying it. 0 input in development.
Also, what you're suggesting is beyond stupid in terms of profit maximization, which is what Apple is all about. You can't design a new technology when the machines are already built to churn-out a specific design (One created by the manufacturer). It's wasted capex and wouldn't benefit much from economies of scale.
Manufacturers are the ones designing tech and repackagers like Apple are only buying them, not "designing" them. It's how companies get component prices down.
Dedicating a fab to 1 single customer is too costly for both the manufacturer and the client.
The client would need to spend R&D developing the tech and the manufacturer would charge an arm and a leg since only that specific client can use the tech and the manufacturer wouldn't be running at max capacity.
Advanced Manufacturers like Samsung both develop and manufacture the tech.
Repackagers like Apple only buy them and don't develop anything.
What you're thinking about is assembly manufacturers like Foxconn. For component manufacturing, repackagers like Apple don't have much say in the manufacturing process and the tech themselves.
