S20 Ultra suffers from some camera issues but Samsung is actively pushing out updates to iron them out. S20+ has less of them and probably will continue to be a better shooter than Ultra in most scenario - but nonetheless you should wait before shelling out $1000+ on those phones until they fix most of the bugs.
Find X2 Pro is a great phone but as for now it's feels slightly overpriced. However, the price might go down after a few months since it's from Oppo and not Apple or Samsung.
You should probably get P40 Pro ONLY if you don't use Google services at all or don't mind installing GMS by yourself and are confident that you can take care of any Google-related issues that might happen in the future. But the situations around Huawei may change drastically in a short period of time, and it might or might not come with the best camera in the market. It hasn't been announced yet, so who knows what it will have and what will exactly happen to that phone?
Just don't rush and hold off until long term reviews on these phones will come out, that's all I can say. If you can't wait then phones like Mi 10 Pro or even last year's OnePlus 7T Pro could be a viable option.

Also even if you use Pro mode strong edge enhance still remains, it's just the image turn out to be slightly less sharpened compared to auto.

I... moreI wouldn't say that's a great reasoning considering how P20 Pro had a better main camera than regular P20 despite the fact that the former was the company's first attempt with Quad Bayer whereas the latter used a more conventional 12MP sensor (which was the largest they could find on the market - 1/2.3"), and that was back in 2018 where no company but Google had a great computational imaging prowess and very few thought of having a QB sensor on a phone. This time around Samsung designed and developed BOTH the sensor and the phone itself, so it's only natural that I was expecting them to get most of the stuffs right from the get go.

Using pro mode and turning off scene optimizer do it easily.
One can also take the photos and adjust the color later if one doesn't like the color.

It's obvious that S20 will have better processing than S20 ultra for now. You can't really make S20 ultra better than S20 in every aspect. That's the difference between 5 years development vs 5 months development.

But you cannot ge... moreThe most ironic part is that the significantly cheaper regular S20 resolves textures better in most cases and doesn't introduce any purple discolouration to the left and right sides of the frame unlike S20 Ultra. Where the Ultra has an edge is the zoom at 4x and higher level, and extreme low light shots, but that's it. In other areas it's a tie or S20 wins hands down, it definitely makes me wonder if Samsung tested the actual devices and carried out proper lab/real life tests before releasing them.

Their camera sensors should be more compatible with their exynos processors than with the Snapdragon processors. So the non-US variants should take better photos?
