Not possible, 12MP sensor can only resolve 12MP of details. You'll get moires if the lens' resolving power is higher than the actual resolution of the sensor, and if you want to get rid of them and extract more resolution out of a Bayer pattern you need to perform pixel shift/super res image stacking. But even then a 108MP sensor with traditional Bayer sensor will still resolve textures better, given that the lens used is sharp enough for such a sensor.

Fact is, the P40 Pro can actually capture low light images in Auto Mode that would only be possible on the S20 Ultra and iPhone 11 Pro Max by means of using their dedicated Night Modes. If that's not enough to say how beast of a performer the P40 Pro is at low light, then maybe test it out for yourself.
Xperia 1 II is read as "Xperia 1 Mark II" similar to their Alpha cameras (A9, A9 Mk II, A7RIII, etc.)
With Night Mode now available on that phone, I'm certain that it would do almost just as great as the P40 Pro, maybe even better since the native pixel size of the sensor is larger (and no, pixel binning doesn't actually give you the true advertised twice as large pixels compared to normal one, since the pixels themselves don't rearrange and form a single large pixel, rather they work together to be more sensitive to light and gather more light information that's slightly better than their physical size could do, but nowhere near as much as being twice the size).

Primarily because their resolution isn't always indicative of the amount of detail that they can truly resolve. 50MP may be a very high resolution, but when taking a full-size image, it barely brings any detail benefit as compared to the binned 12.5MP image. It does give you more room for cropping, but upscaling could also do that anyway.
In the case of the Sony, while it may just be a 12MP and 1/1.7" sensor, if the lens is engineered so well to the point that it could resolve details as good as, say 108MP, then the 12MP images that the sensor produces could then be upscaled to 108MP and look almost as detailed as a true 108MP image from a single bayer sensor. We don't know things yet, but given the new Zeiss lens on the Xperia 1 Mk II, I have some hopes for some things like this.

So why not have that? Instead, manufacturers such as google are being very frugal with hardware thus depriving consumers of its potential. I strongly suggest protesting against this cheap behavior by not buying their products.

They put a 1/1.7" sensor in... moreA smaller sensor doesn't automatically already mean an inferior camera system in general, because a well-engineered smaller camera system would be better than a half-baked larger camera system, and the S20 Ultra is the perfect example of that.
Maybe holding off our judgements first until the phone is tested officially with the official software would be better than giving out conclusions based on what's said on the specsheet alone.
Keep in mind that in 2018, Sony's 19MP Motion Eye™ sensor proved to be even better than Huawei's 40MP camera at capturing pure details in broad daylight, and it held up very well in low light scenarios.
Last year, Xperia 1 was one of the greater low light shooters around, even beating the Note 10+ without Night Mode.
It's not that Sony is incapable of doing great things with their cameras. Heck, they can actually do the same type of image processing as what Apple, Samsung, Google, and Huawei are doing. Rather, they leave the camera as pure as they are, which is more important than modifying the image way too much in a sense that it's no longer the realistic image that it should be visualized.
And don't give me that "There is a manual mode for professional adjustments" argument bs. Even in Auto Mode, the camera must stay realistic to what the actually scene really looked like. But for the sake of consumers' demand, Sony has added Night Mode and Eye AF for the ultrawide camera.
Or maybe you can just install GCAM on the phone if you're really looking into that HDR processed look for your phone. You aren't losing anything with Sony's camera system.
One thing the Xperia 1 Mk II's camera could do, that nobody else can, is capturing high-speed moving subjects with perfect focus across the frame. HDR stacking won't be useful for those things, and it'll eventually have ghosting effect because of fast movements.
