If UFS 3.1 meant "Phone needs to achieve at least 3000MB/s sequential read and write to be UFS 3.1 certified" then that would be a rule. Instead it's UFS 3.1 can achieve X speed. If vendor actually opts to achieve it is another thing. That's like bolting PCIe 4.0 standard on GeForce GTX 1050. It would support PCIe 4.0, but it would ultimately be pointless and it would never even reach those speeds because subsystems are so much slower. Same with UFS 3.1. It supports up to certain speeds, but if NAND inside device is not up to those speeds, it just won't operate at those speeds. As simple as that.

Redmi K30 Pro UFS3.1 has lower speed than UFS3.0 from Samsung.
Like 850Mbps vs 1100Mbps.
UFS3.1 used by Mi11 has about 1800 Mbps.

Also iPhone is using NVMe standard, same as used for high speed SSD's on desktop computers. First iPhone to use NVMe was iPhone 6 in 2009. First Android phone to use UFS was Samsung Galaxy S6 in 2015 iirc...

Only way is to benchmark the phone and see what its read and write performance is. But in general, I don't think there would be any difference for as long as it's not eMMC. UFS can do read and write operations at once where eMMC can only do writes or only reads at any given time. Basically UFS can have traffic going in both directions at the same time where eMMC can only have traffic go in one direction. It's why basically all eMMC phones lag horrendously when installing apps and you want to do other things. When installing apps, you're doing a lot of writes and that causes stalling in reads. I just personally wouldn't care if it's UFS 1 or UFS 3.1 as just having UFS should give enough of a boost that you can't tell unless you're really hammering the phone with huge sequential transfers.

Phones can have UFS 15, but if they pair it with crappy NAND it won't make any difference. UFS is not a minimum required speed standard, it's just a standard that allows those speeds. It doesn't mean manufacturers actually phsically utilize them.
