Crypto miners as of now do not really need this card. Last year's 5700 is performing better in mining then this card. (New drivers could increase the performance of this card in mining).. But as it stand now, its mainly a gaming card.
Once the miners / scalpers determine this card is worth crypto.. or very high demand in gaming.. booom all the stocks will be gone in no time!

If iMac uses the next gen of the M1, i think it will be much better than a $2000 scalped PC.

PC is not worth building now. Thanks to scalping. With that price, better wait for the new iMacs with Apple silicon. You get a 5K monitor to boot as well! You can even salvage your existing monitor as secondary monitor..
And your old PC... put aside for backend task.
