I live in France but I have the V50 sprint version (now t-mobile), bought from eBay. The phone is stuck with Android 10. How can I upgrade to Android 11 or Android 12 without rooting the phone ?

You need to compared the "Mid-Current-Year" LG device, against the "Late-Last-Year" Samsung. So give LG phones a 6-month handicap to level the playfield (display and camera). It actually works out well in that case. But you gotta account for the Exynos chipset, which is 6-months behind LG's chipset in terms of performance/battery life.

                    For instance:
                    LG G6 (QSD 821, 3300mAh, 1/3.1") vs (QSD 820, 3600mAh, 1/2.55") Samsung S7+
                    LG V30 (QSD 835, 3300mAh, 1/3.1") vs (QSD 835, 3500mAh, 1/2.55") Samsung S8+
                    LG G7 (QSD 845, 3000mAh, 1/3.1") vs (QSD 835, 3000mAh, 1/2.55") Samsung S8
                    LG V40 (QSD 845, 3300mAh, 1/2.55") vs (QSD 835, 3300mAh, 1/2.55") Samsung Note 8
                    LG G8 (QSD 855, 3500mAh, 1/2.55") vs (QSD 845, 3500mAh, 1/2.55") Samsung S9+
                    LG V50 (QSD 855, 4000mAh, 1/2.55") vs (QSD 845, 4000mAh, 1/2.55") Samsung Note 9

Both 7 Pro and 6 Pro was launched in the same year (2020) and has the same Snapdragon 720G chipset with Android 10 out of the box. Note: Android running the Linux Kernel, you cannot get guaranteed security patches for more than 2 years. That's right, even Long Term Support (LTS) Linux Kernels are not guarantee for more than 2 years, although it can be supported for up to 6 years if private companies agree to lend a hand in the open-source project.
And that's only the innermost part of the software stack.

I was dealing with this nonsense since Android Eclair till Android Pie when I finally had enough (took me long) and looked for something else (iOS). It's annoying how they just randomly decide to leave out models just to boost sales of new models and it's pathetic.

Is there any chance we will see Android 11/12 on G8X?

Honestly speaking, LG devices were pretty great.
But they didn't have much/if any marketing, not available in all locations, and their prices were always more affordable (which made consumers think they were lesser/cheaper products). Despite their advantages, I would say majority of their short-comings were simply from bad management.

After all the QC issues they had during the LG G4, G5, V10, V20 era... they really came around after that as great daily driver phones. They weren't as creative or experimentative as they once were, but at least the new devices worked, as expected, and consistently. Sure they always had something lacking compared to the competition, such as the Camera, Screen, Processor, etc etc. But you have to remember the LG devices were cheaper, and got massive discounts quickly if you asked or knew where to shop. So it wasn't quiet fair to compare them to the more expensive flagships coming from Samsung or other alternatives.

So the best way to do them justice is to actually compare the LG devices against last year phones:
                                      LG G6 vs Samsung S7+
                                      LG V30 vs Samsung S8+
                                      LG G7 vs Samsung S8
LG V40 vs Samsung Note 8
                                      LG G8 vs Samsung S9+
LG V50 vs Samsung Note 9
...now they don't look too bad !!!
