So I lie, i can uninstall stock app (like App Store) on iphone and install an alternative one ? I didn't know iOS was open source and I cloud install my own os version with hardened security and no stock app on iphone ? X Doubt, I think I will be stuck sharing some of my data with Apple by using their default apps.
There are flaws with Find my iphone off with reserve mode (search evil never sleep iOS vulnerability), major iOS FCP Zero Click are rewarded less than android (search Zerodium), these are fact you can't deny and search for yourself on internet (and there is a ton of other vulnerabilities).
Android by default is not fully secure of course (like iOS), but at least with android you have the choice and possibly to create an os that could meet your security requirements. Or install easily an already made one like Grapheneos with hardened security and privacy, with no Google apps by default.
It's way better than trusting an anti consumer company like Apple.

Look at Google. Is the biggest data mining company out there. Still, millions of people buy Android phones or use Google apps each day (especially Maps and Chrome).
The average consumers don't care about security issues or data tracking, as long as their phones work. By average consumers, I mean majority of smartphone users.
The people who care 100% about security on their phones, are either tech geeks, public persons (actors, artists, etc.) or people that have something illegal to hide.

My opinion is that, if people are being spied upon, they should clearly be informed on their phones, as to which exact organisation is keeping an eye on them, and for which exact case/lawsuit/reason.
Otherwise, there should be no spying, not even on NSA/ National Security levels.

If only iphone were secure and let users install / uninstall whatever they want on it (including the stock apps and even the os).
Apple is don't care about their consumers, there is a reason that iOS FCP Zero Click are rewarded 500,000$ less than Android (Zerodium) : iOS is less secure than Android (eg "evil never sleep iOS" allow malware install with phone completely off), iCloud unlocks, remember vpn leaks, etc..
For good privacy come first good security.
