It seems like you aren't that deep into the Apple ecosystem, so you could save money by going the Android route. Half the price, better specs where they matter. And I can ensure you, you won't have to learn a lot new, either

Click bait tittle. Selling like hot cakes? haha where's the sales numbers in devices sold?
An S25 12/256 can be bought for under €700 in Europe now, put it side to side with an 16e and compare. A 16 can be had for little more...there's a ton of options that are better that the 16e.

Current SE owners bought it because:
it's cheap (in the the Apple way of thinking)
it suits their basic usage
it's small/light
They DON'T CARE about:
magsafe (Apple perceptiveness was right on that point)
high refresh rate
oled screen
apple intelligence
face id
And they're not ready to pay twice the price (EUR729) of the last SE (EUR369) for the base-line model even if it's coming with more storage or the above futile upgrades.
Last but not least, the iPhone 16e is, and will ever remain the medium popcorn of the theater; meaning an appeal to the mid-tier for only a couple of additional bucks.

This phone is ideal for me. I have an iphone 8 with a failing camera that I set up in 2018 when I bought it and haven't needed to do anything else with it.
But camera? - I have a mirrorless camera which takes better photos than the best camera phone. The camera on this phone works fine I like the way it looks in a sea of phones which have all developed an exacerbation of bullous pemphigoid.
But display? I don't want to peer into my phone for longer than strictly necessary, so this works fine for me. I have a life.
But older iphone? The battery is larger and lasts longer on this (on every other test apart from GSMArena). 10% larger means I can set the battery to charge upto 95% and run it for longer.
But cheaper android? I have no interest in spending any more time than necessary setting things up, learning new interfaces, or least of all installing new ROMs. See above.
But price? I buy my phone outright and use them for 5-6 years. Over that period, differences in price don't matter that much.

Data has not shown how much sale of iPhone 15/Pro or 16/Pro declined due to sale of iPhone 16e. It may be that iPhone 16e has taken pie from iPhone 15/Pro or 16/Pro models.
