My trusty old N8 turned 2 years old on 30th of last month, as in a few days ago. I was amongst the first people to get a commercial N8, picking mine up like 2 hours after they were shipped from the factory.
It's still alive and kicking and I dont regret buying it at all. Been worth every euro. I tend to upgrade phones every few years and I'm now looking at a Lumia 920. N8 was my first touch smartphone and I think its still a revolunationary product even compared to new smartphones, most phones still dont have FM transmitters or as good camera as the N8 for one.

First copy important data in pc them format mass memory. If the problem persist you will have to format the phone to... What is clear is that is not the phone to blame:).

Go to factory settings, hit delete data and restore. wait until all is over(can take more then 5 minutes, so don't be scared) Now plug your phone intro pc and open nokia suite, hit software update, let nokia suite to scan your phone. Will appear something like: you have already the latest system, hit reinstall. That's it.

What country are you from? It seems strange that the Lumia isn't being sold in your country.
Anyway, if you want my opinion, you should buy the SGS2 rather than the N8. The SGS2 is a more modern and up to date phone in terms of hardware and future software support. Nokia have released their final update for the N8 (Belle Refresh) and after that there won't be anymore support.

i had same case like yours my n8 keeps freezing bec installed a lot of apps and some of those were just no used.
I tried it over the air install and sometimes it doesn't fixed it.
Just go to a Nokia Care Service center for just an hour they can reinstall everything back. But make sure to back up all your stuff.
My phone never freezes..
