They are cropping from Main sensor in low light. Telephoto cameras only have real advantage when above 5x(The periscope ones) .
108mp on Xiaomi Mi 10 can easily give comparable images upto 2x-3x.
So most users won't miss the telephoto on that.
The 2x portrait lens on Mi 10 Pro is great though since it's a S8 or S9 sensor with dual pixel AF. Sadly, apart from Xiaomi, no one offering that for 2x. All they offer is weak sensors which are useless.

And the bigger is the zoom used the bigger is the difference in quality, detail, noise, etc. There are a lot of comparatives online. Even today one in android central between Galaxy S20+ and LG V60 that demostrate it.
The V60 can't compete when zooming object and that against a 3x optical zoom of the S20+, imagine how ridiculous will be the photos with zoom from the V60 against a 5x or 10X camera from other phones. The photos from V60 not only have lower zoom also at the same zoom they are softer, with lower details, worse colors, and null in low light.
Telephoto cameras are very useful. More than ultrawide ones normally. But have all them are great. The only ones not needed are the macro ones, a invent for the number while being cheap, idem for depth sensors.

It's not Quad Bayer vs regular Bayer sensor of the same size here.
108mp Quad Bayer 1/1.33" sensor vs 12mp/8mp regular Bayer 1/3" or 1/4" sensors.

It also matters in very dark shadows at low Isos.
But yes, in good light conditions more pixels usually don't lead to more noise because the noise that is caused by the slightly different amount of photons that are emitted/reflected every millisecond plays a higher role in good light conditions.

In good light conditions Quad Bayer sensors capture much less detail than Bayer sensors (with the same megapixel count) because they need to rearrange the pixels artificially (remosaic mode). This also causes a lot of artifacts. That's also why the Xiaomi Note 10 has a dedicated 50mm equivalent camera, although in theory a 50 megapixel Bayer wide angle camera is enough for 12 megapixel 2.0x photos. But the 108 megapixel sensor captures less detail (and produces artifacts) than a 50 megapixel Bayer sensor, therefore dedicated 2x tele cameras are needed. Theoretically the 27 megapixel Bayer mode of the Xiaomi Note 10 can only replace a 12.2 megapixel 1.5x camera.

I do not onow why ppl... moreForget artifacts, those weak telephoto sensors simply aren't capturing enough detail and data compared to large 1/1.33" HMX sensor. Your knowledge about Quad Bayer Algorithms easily reveals the fact that you are an amateur at best.
Gsmarena confirmed in their reviews about Xiaomi giving good 2x-3x Zoom levels comparable to those from dedicated 2x-3x telephoto lens.
Only images from 5x periscope lens have advantage over Xiaomi Mi 10 zoomed in images.
Similar thing for regular S20 zoom mechanism.
Same thing for LG as well.
