Apple has no use for anyone's personal data. Their whole business model is built with a user-centric focus, with privacy as the common denominator. What little data they gather to improve their services are broken into tiny pieces and fully anonymised before being sent away for analysis to prevent any ability to trace it back to someone.
To dismiss the demand for privacy is frankly idiotic. There's a reason Script- and Adblockers are commonplace, GDPR has been put into place around the globe, Apple products are in high demand in businesses that require privacy, people use VPN's and switch over from Google to DuckDuckGo and similar services.
If you wouldn't print every detail of your private life and hand it over to a stranger on the road, don't do it on your computer or phone either.

"full privacy" in this day of age, come on man you're being scammed if you think like that. It's more like Apple isn't sharing your private information with the third party but they are still using it for themselves. You can say Apple offers more privacy.
Anyway, don't think about privacy too much, you'll sleep well at night.

Apple has its ecosystem locked down pretty tightly - sometimes prohibitively so. It was the same with Windows Phone when that existed. I feel like Apple have improved a lot lately though, by adding a lot of requested features and more advanced options.
Android has the great advantage of being open-source, which lends itself to easier customization. And now that most manufacturers have given up on locking down their bootloaders, you can really be in control of your device.
Android in the early days used to be a mess though, and quite user-unfriendly. In this regard iOS and Android have approach each other in terms of design and functionality. It's nice for users of either system.

Android is far from perfect in this regard, but still much better than iOS.

In Android, you even become a product of Google by giving out your private information to them for their advertisement purposes. With Apple you pay for the hardware AND software, and retain full privacy.
