Even if they take 100 photos of the same subject in order to get just one usable photo out of those, they will not delete the rest. If they go on vacation they will take photos of all kind of random stuff that they will never ever look at again - because it's nothing interesting, just a photo log of where they went.
Others might use local storage for Spotify/Apple Music, Netflix, Amazon Video, etc. for they might be travelling a lot and they might not get any wifi or internet for long periods of time.
Others might not understand the concept of paying for multimedia and so they illegally download all their music and movies from torrents/mp3 websites/youtube converters instead of subscribing to a paid service and they store that on their devices.
All in all, people will just waste storage for random stuff because storage is very affordable nowadays. And they want to pay the minimum amount for that, instead of going with the better option of buying a device with more internal storage - which is faster, more secure, and more reliable than sd cards.

I mean, I have a 4 year old galaxy s6 with 32GB of storage and have never filled it. 4 years and never filled it. How many photos per day can you take so that 64GB are not enough?

At $369 it would destroy every phone in its price range, including Xiaomi's own SD845 flagships.
At $518 it's still good, but runs into much tougher opposition.
