Why such a huge megapixel in a small sensor ? Why not a single 1 inch 12mp sensor ?

Now, lets see if the rumors about 2 binning options will be real or not. The rumor I have read says the phone can take both 50 MP(Quad Bayer) photos, or 16 Bayer 12.5 MP photos as well.
I am also curious if Samsung can implement variable optical zoom into this monster. Imagine if they manage somehow to make this, and you can zoom from 1.1x up to 5x optically, that would be awesome!
