1. Samsung S25 ultra you can get for less than the Mi 15 Ultra
2. One UI 7 beats Xiaomi's UI (alot of reviewers and youtubers agree)
3. From GSMarenas test a Mi 15 ultra with a 90 watt charger only charges 8 mins faster than a S25 ultras 45 watt charger LOL RIP its literally neck and neck for the first 30 mins of charging
4. S-Pen
5. Alot of battery tests have the s25 ultra beating the xiaomi even with xiaomis bigger battery (once again Xiaomi UI is a battery hog so samsungs 5000mah>xiaomi's 5400

The camera comparison is surprising. During the day there is really hardly any noticeable difference in quality with the main cameras. Xiaomi is better at the optical zoom levels but surprisingly in good light Samsung's 10x looks better to me than Xiaomi's 8.6x in the outdoor pics. Xiaomi's pics are often a bit blurry (not just a relaxed approach to sharpening but blurry). In lowlight though the S25 ultra is well behind. In video I think Samsung is probably slightly ahead. They are very closely matched in daytime but the lowlight video on the 15 ultra is disappointing. It's especially dissapointing in terms of stabilisation when walking at night as it really can't handle lights at all without severe jitter. A comparison of lowlight video between it and the s25 ultra and Vivo x200pro showed how poor it was in lowlight video compared to the x200 pro which was miles better than these two in lowlight video quality. Maybe Xiaomi will improve the lowlight video later but that's an unknown at this point.

I'd argue the better camera is not only for photographers. Plenty of normal people like having a phone that can take good low light photos especially of moving humans, which Samsung is terrible at.

Here is a tele comparison I made in a store between the Xiaomi 15 Ultra, my Google Pixel 7 Pro and my Panasonic Tz80.
The distance was maybe 3 meters. The light conditions were not perfect (Panasonic's exif data: f/6.4 1/80s Iso 400, Xiaomi's 30x auto mode exif data: f/2.6 1/100s Iso 320, Google's exif data without Night Sight: f/3.5 1/77s Iso 184)
The HDR+ dng file of the Pixel 7 Pro was opened with Lightroom mobile (color noise reduction 25, luminance noise reduction 0, sharpening strength 130)
The Panasonic Tz80's in-camera noise reduction setting was set to the lowest value and its contrast setting was at -2.
The additional AI zoom enhancement of the Xiaomi 15 Ultra was turned off in the settings (it made the results worse anyway).
Note that apparently, the Xiaomi 15 Ultra only can save periscope dng files with 16-1 analog binning (and apparently you can't zoom beyond 100mm when raw is enabled), so I didn't even try dng files from the 15 Ultra.
I have uploaded crops of the images (the crops are from the center of the frame). In each case I took multiple photos, so I made sure that the image wasn't out of focus.

You can see that the Xiaomi 15 Ultra can suffer from fake detail. In the 17.6x auto mode image the number at the top looks like 4.85, in the 30x auto mode image it looks like 4.05 , but it's actually 4.35.
The results of Xiaomi's pro mode (that's the mode where you can choose exposure time, white balance, manual focus, Iso) seem to be less artificial, but they have noticeably less detail than Xiaomi's auto mode.
Note that Gsmarena's comparison doesn't show the performance at 17.2x (Xiaomi advertised the 17.2x performance at the official presentation). At 8.6x there could be 4-1 analog binning and when I tested the 15 Ultra in a store, there was definitely a tiny bit more detail at 18x. Though it's not clear how a 200 megapixel sensor with 50 million microlenses can capture more detail than a 50 megapixel sensor with 50 million microlenses and some parts of the official presentation only advertised 8.6x (200mm) instead of 17.2x.

Not sure what are exact sensor sizes, but despite xiaomi having brighter aperture, exposures are similar, considering xiaomi is often overblown, it's hard to compare, s8nce samsung get darker results, while it could be brighter if set to xiaomi preferred iso and exposure.
I would say that samsung went for natural look, like, if it's night, don't make it into the day.
Added detail in xiaomi was great tho...maybe to set the exposure lvl based on needs would help...
Xiaomi yellow all the way tho...
I had quite of trouble with pink tint in past, but it's also about processing. I guess xiaomi go for simple one, which however make it's color look not so good, since the sensor is small.
What xiaomi is great in is how fast it can shoot tho, lile most phone Inc samsung, Apple etc. got sort of lag when pushing the shutter, no lag in xiaomi was... at least when I tried.
Upsides, downsides...
