The main different between the plus and ultra is that the ultra has a bigger battery, slightly bigger screen but most notably a 200MP camera and it's mostly the camera you pay for so if you don't need that, then you don't need the ultra model.
All models also have the same CPU.

How come in the review you specify that "Superb stereo speakers." and in the specs page "Loudspeaker -26.5 LUFS (Good)"!?!?

I would prefer this over the ultra. Its easier to hold compared to ultras.. It looks sexy too lol...

Coming from an A52 5G (from a DEAD S7) would it be worth the jump?. Uses would be photos, 1080/4K 60FPS, FB, TW, Whatsapp, games and even hardcore ones like GENSHIN IMPACT (If it can run all to MAX 60FPS), along WiFI etc

Double storage for free, extra discount for trading older S/Note series, 70 dollars of e-Voucher (can get accessories for free), and better warranty (Samsung Care+ for 1 year). My priority now is excellent & efficient SoC, longer battery life, large internal storage, great (bright and vivid) display and capable of taking good photos and videos.
Beyond pre-order period, the price tag isn't enticing, especially for it's shortcomings (no AF on UW, 8 gigs of RAM, less capable of refresh rate and lack of QHD)
