Connection to my Xiaomi bud 3 pro was almost instant, faster than the time I removed the buds and insert into my ears. Haven't had problem with connecting to bluetooth printer as well.
Apps crashes, yes, but rarely, most often than not it is due to the app itself.
Battery life has been great, never had to charge mid day on normal daily usage, only had to top up when I am constantly using it under heavy usage.
Security app do prompt , but definitely not multiple times a day, more like 2-3 times per week. And it can definitely be disabled via app info.

Just got euro version of the phone. Pretty nice so far, camera is good (was a bit concerned from all the hate it was getting, but it's nice). Selfie cam is pretty bad but doesn't matter to me. 5g works out of the box in the Middle east (some phones don't even if they support the bands).
Weird thing is it doesn't have esim, even though the other versions of Xiaomi 13 do. Don't get how Xiaomi can drop this.

The camera (and the phone itself) is amazing but the 3.2x camera is 2.6x (60mm). You can notice shooting RAW and you can see the clear transition when you move from 2.5x to 2.6x

I use the Chinese 16GB/1TB White Variant
1). Updates are once in a few months, but apart from not having the latest security patch, the phone works flawlessly in the software department, I'm using the China-MIUI version and it very fast and fluent experience
2). I had no bugs in the regard of what you said, all apps works perfect for me, and mic is crystal clear in all apps and in phone calls, speaker calls, etc... I did have some random weird bugs that data didn't work from sim card, and NFC payments didn't work (probably due to the fact I barely restart the device), and yes reboot fixed it, it happend twice in a few months so I cannot blame the software, I work in IT and fixing bugs is what I do for a living so I couldn't care less haha
3). again voice calls, speaker calls, voice messages in phone app and third party apps, I use WhatsApp, telegram, Instagram, meta messenger, all work crystal clear and direct no issues whatso ever, also I have a feature in WhatsApp to send pictures in HD, while my Samsung and iPhone friends don't have that feature (idk why)
4). Bluetooth works perfectly fine, it connects fast to my car, and my Redmi 4 buds pro (I chose budget earphones since I don't use them so much, only in the gym)
5). I did experience data not working and NFC payments not working, a reboot fixed it, I can forgive this issue even on a flagship (bugs always happen, doesn't matter which device you are using)
6). I can partially agree with you on this, I use Xiaomi Watch S1 watch that is paired to my phone via Bluetooth all the time and it sends updates constantly which also drains the battery, and using the phone does consume more battery then standby, I use the phone on FHD+ resolution and the "default" refresh rate options, auto brightness on, and I charge the phone only Wired and with the included 90W charger and an additional Xiaomi 120W charger I have (the brick of a wireless charger), I can charge the phone at 50W wireless but why do it when you have 90W wired charging? Wired charging is much more efficient long term, and it takes less time, so yeah I am the tech savvy charger, I use my phone from 20%-80% battery and when it arrives at around 30-40% I usually charge it to 80% and it lasts half a day till 30-40% again which I charge the phone again, I don't charge the phone overnight as there is no use, if I need to use the phone to longer I will charge it to 100% but I don't need overnight charging as 90W wired charging is very fast ( I wish we had 120W like the 13 pro which is weird move by Xiaomi, but it is much better than the 67W I had on my 12s Ultra last year), battery life is good enough and charges really fast, I'll take it than having to overnight charge a slow charging phone.
7). yeah security app cleaning notifications is annoying and dumb, I use flagship phone with flagship specs and top end variant and it keeps reminding me to clean 1gb of temp files when I have over 500GB free lol
now with my takes on the phone:
1). the Hardware is great for the price, I Have purchased the phone for $1210 for the White 16GB Ram 1TB Storage variant, and I can say the experience is 99% issue free and amazing: the screen is super bright and very sharp, easy on the eyes (I have sensitive eyes), the speakers are loud and crisp, the device isn't too heavy, the Wired and Wireless charging is very fast, the connectivity is top notch, I use wifi to transfer files to pc and back and it's very fast (around 1GB speed), and lets not forget the cameras, the 4 main-flagship cameras on the back are awesome, I can take good photos in many different focal lengths, and all are crisp
2). the software is great too, not many updates but it is actually a good thing, I haven't found any bug that needs fixing, every setting every feature works fast, the phone opens apps so quick and it's hard to go back to other phones once you experience the speed
3).the only downsides is the selfie camera is overexposing like crazy, and only 108060fps max option, no 4k is a joke for a camera-phone, but I'm not a selfie guy so I don't care much, and there are some minor software quirks here and there, that a reboot fixes easily, so for $1210, you get a top grade camera-phone with a great phone in addition, and for the downtime of charging (few minutes each time), it's pretty much fault free.

Android 14 official version is 100% not out from beta yet on any phone. So you didn't received any OS update. You received regular monthly-quarterly update. Just few were bigger, two were regular. Sony xperia 1 v sucks cuz it's so pricey and it gives only 2 major OS updates, the hottest model of all snapdragon gen 2 models(check XDA xperia 1 v, there are people who proved it with statistics).
It's hard to talk with people like you because you can't tell difference between s21 and s21+. S21 is small flagship and because of it's size fair comparison is between s21+ and xperia 1 v. Same goes with xiaomi 13 ultra is can't be compared to s21(or s21+) and xperia 1 v.
Your direct comparison xperia 1 v and s21+
S21+ advantages: dex, snapdragon gen 2+ , 4 OS major updates, 5 years of security updates, easier to find parts to fix phone in almost all countries.
Xperia 1 V advantages: camera quality if you prefer natural colors, 4K screen, aux and sd card.

The Xioami 13 Ultra is not a "natural camera" at all, though it is arguably the best camera in most scenarios. It's not worth it for €1400 but it is for €900 which is what I paid for it. If you want the most natural camera there is and one that has the best video, that's the Xperia 1V.
I have both the 13 Ultra and the Xperia 1V and I can tell you that. It was nice that the 1V also came with Sony's latest headphones for free too. I am wearing them now lol.
As for security updates or updates of any kind? Forget it. This is Xiaomi dude. I've got 1 update to the OS in 4 months and it's full of bugs. In the same time Xperia released 4 updates. One a month. 2 big ones and 2 minor patches.

As a few month owner now. I am becoming more and more disappointed in this phone.
1. I thought I would get so many more updates. So far in 4 months there has been ONE update. Which is just crazy.
2. The phone has a LOT of bugs. Specifically the most annoying is that the Microphone will just outright stop working. You can reset it with an app from the Play Store but it's extremely difficult to tell when this has happened. Basically you record a message or make a phone call and the other person cannot hear you. You can see that it wasn't working. So I have taken it upon myself to start resetting it before every single message because too many times it hasn't worked.
3. Again with the voice quality. You just sound like you're underwater in apps like Whatsapp, Threema, Signal etc. It's super weird. The sound quality is literally terrible. For some reason in Telegram it works perfectly and it truly is super crystal clear but how some apps are obviously working with this mic is just not working at all and the sound is garbage. I need to use a third-party app to record my voice messages which I then send as attachments. Those are crystal clear but I wish I could just use the app normally.
4. It is so slow to connect to Bluetooth devices and when doing so, it doesn't work properly as a microphone. It can take ages to connect to my headphones. My Xperia 1V connects to everything within an instant. The Xiaomi takes 25x longer.
5. The phone has some weird glitches and some apps crash randomly but it's usually not something that causes a huge problem but it absolutely shouldn't happen on such a flagship phone.
6. The battery life really isn't as good as it should be. By comparison, I can leave my Xperia 1V alone and not use it for a whopping EIGHT DAYS. Yep it stands by still connected to Wifi, still getting all my notifications but I get EIGHT DAYS of battery out of it. Still get my emails reliably and I haven't even enabled Stamina Mode on the Xperia. Sony's battery consumption is just absolutely next level and even when I do use the Xperia it drains so slowly that it's just ridiculous. It's like it uses no power at all so I can actually forgive that the charging isn't all that fast. This Xiaomi 13 Ultra drains as fast as it charges, they need to do better.
7. The Security App specifically is the biggest piece of garbage I have ever seen in my life. The constant annoying multiple-times-a-day notifications to clean my phone that I cannot disable. Why do I need multiple notifications to clean 1GB of thumbnails or cache files on a phone with 512GB you clowns. The popup before installing any app that it is "checking for virus" and the amount of screens I gotta tap through in Chinese to install an app from F-Droid or something. I won't buy another Xiaomi phone no matter how good the camera is, just because of this one stupid app that treats me like a baby. If I wanted my hand held, I would buy Apple.

If you want more features pick samsung(for example DEX, Spen), if you want more and faster software updates pick samsung(samsung gives 4 OS updates, 5 years of security updates), if you want way faster quick charging phone pick xiaomi.

Am not gaming fan but camera fans and software update fans and I don't like natural camera at all, some one told me this 13 ultra get non natural camera too
