If they intend to, it should have been there in the very beginning instead of through software update. Even Redmi Note 5 & 6 Pro doesn't support 4k video officially. There is still a chance they add 4k to Note 7 PRO this time, but not to Note 7. Still, it is an unlikely possibiilty, because Xiaomi seems to provide this feature only to its premium series.

It's not a gimmick. It uses Samsung GM1 sensor. While taking a picture in a good daylight condition it uses smaller pixel size 0,8 micron and up to 48MP. It binning from 12MP of low light condition (the effective resolution) while the pixel size up to 1,6 micron.
It's the same with Sony IMX586.

On paper Redmi Note 7 seem to have a great specs but I doubts it will do well in the real life especially the 48 mp camera because it were a gimmicks. SD660 cannot support 48 mp camera, it support till 25 mp. www.qualcomm.com/products/snapdragon-660-mobile-platform

dont buy from re-sellers until price lowers to 150 euro.. anyone paying 250 dollars for this phone is a fool and deserves to pay ripoff price!!!

It is their right to sell at whatever price they want. They can sell $2000 if they want to. Wait until supply & demand is more balance, they will only probably sell a few dollar more than official price
