It isn't any better than the notch or the removal or inbox accessories trends that Apple started, in anything it is the least justified and only has pure greedy reasons behind it.

Better sound quality with 0 interference and worry about low battery on more devices.
Is not disposable compared to an unrepairable wireless headphones that is just another eco waste when its battery dies in 2-3 yrs.

*It doesn't prevent you from using wireless anyway.
*Back compatibility is a key thing in computing, hence why motherboard even 1000$ high end one keeps having a PS/2 port, and have 5 Jack ports.
*Because many don't want wireless audio equipments, it ca' be for many reasons, need to recharge another thing, prefer headset over hearpieces, don't want to deal with Bluetooth cons, preferring the superior audio quality of wired, don't want to deal with all the issues of the Jack to USB-C dongles.
*Because there are a lot of high end audio equipments, including professional grade that come with a Jack port and don't have wireless.
*A lot more Jack equipped accessories are available than Bluetooth ones, it is the case for my Corsair Void Pro.
*There are non audio stuff that rely on the Jack and are expensive or non-existent in Bluetooth or USB-C and doesn't work with the dongles, like PayPal card reader for example, but also a lot of gadgets like light, fan, even camera.
