Something else about iPhone data and Apple. Even though you may not use the cloud, you are still signed and they collect your data. Even if you sign out of all cloud service (meaning signout of Apple), iMessage and FaceTime still uses it. Apple has placed a lot hooks into their apps to get you one way or another. To Apple, they own you and should feel priveldged to be in this position. At least Google tells you straight up they are collecting your data no matter what you do. Apple hides this fact to sell us on privacy...that's a joke, they would lose a lot of money or would need to sell the privileged to give devs access to APIs to get our data. Money, money , money , that's the name of the game to Apple. Don't believe the hype!!

It's not just app data, it all data. I did a restore of my iPhone 12 Pro with IOS 14.4 , rebooted and setup the phone as new without copying any data ...so it is too be clean like factory new....however, various settings and data came back! After a couple of restarts they went away. What is going is like on a PC with multiple partitions on your hard drive, one for OS and another for data (this is how you can install another OS and still have your data). When you do a restore, it installs the OS on the System partition and master file table is refreshed (data still there) so you can write over it. Apple says they are about privacy, but this all about marketing..

            I smell new lawsuits incoming.

IOS can't even disable the spying as there is no control over OS even after jailbreaking.
Apple in Stock mode is spying and no amount of justification from you will solve that problem.

                          Not a big deal,

but you can disconnect yourself from internet, turn the device off, wrap the device with metal sheet and burn it completely with c4
                          - in case you really don't want anybody to track you

It does not matter which OS you are using

Let's get this straight. iOS like MacOS have a local keychain and iCloud Keychain.

Keychain consist of data, such as password to connect to wifi, login credentials, secure app details. etc etc.

On the Mac, you have an app called Keychain access. From this app, you can see all the data and modify it you see fit. On iOS, you only have the Account & Password under settings, which does not show every keychain data.

The keychain data cannot be access by another app on the phone. However can be read again when the app is installed again. Since each app have its unique identifier.

So by right, the keychain data is safe in your device. Its not shared to anyone. And its up to the developer to give an option to delete the keychain data. Sure, you can say its Apple's fault, to provide a app call "keychain access" on iOS to manage by the user.

You may just as well post all your private stuff right here... Only alternative are gazillion terrible ROM's for which you'll have huge problems finding a phone to actually install them on. And then you'll have even less support and updates for 99% of them than you do with already non existent support on official ROM's.
